Our family consists of three boys (two teenagers and a pre-teen), my wife and myself. My wife does a great job of eating healthy but the rest of us not so much. I have type-2 diabetes and my youngest son has type-1 diabetes, so we are trying to eat better. This blog will contain recipes that are easy to make to fit in with our busy lifestyle and also as healthy as possible. We're not health food finatics but we do want to eat healthier than we have done in the past.
We make bi-weekly menus so that we know at a glance what to make for supper on any given night. This helps alot with that feeling you get when you come home after a hard day at work and would otherwise just throw in a pizza or tell everyone to have leftovers (we do work leftovers into the menu as well so nothing goes to waste). We make the menus based first off of what we have in the house. We make an inventory of everything in the fridge, freezer and cupboards and then look at what is on sale in this week's grocery fliers. With the ingredients we try to make balanced meals that everyone likes.
We've made the decision that we will incorporate more crockpot cooking into our lives. We've seen those books and sites where someone tries to cook in the crockpot everyday of the year and as I look through the recipes I can find five or ten that my family would eat. So we'll search the web and recipe books to find recipes that a picky family might like and we will give them a try.
